- In a bowl, mix the vegan mayo with the corn, adding more or less mayo depending how creamy you want it.
- Add the nutritional yeast and stir. You can adjust the "cheesiness" of the dish by changing the amount of nutritional yeast.
- Stir in the chili powder a bit at a time, until desired spiciness is reached.
Notes
This is hardly a recipe, actually! Feel free to toss all in a bowl and adjust the ingredient amounts until you get the consistency and spiciness you like. My oldest tends to like less mayo and more chili powder, but hey, you do you! :)
Of course, when we ate this in Chicago and when we made it at home, my daughter gobbled it up before I even thought to take pictures. I'll update this with some photos the next time we make it!
